Kitchen Aid K5AB Flat Beater For K5I am a pastry chef and use a KitchenAid everyday. The mixer I have at home came with a plain metal beater and the one I use at work came with the enameled one. Unfortunately frequent use of this beater chips the enamel off and so you will have small pieces of it in your doughs. The plian metal beater works perfectly and is easy to clean. If you are only an occasional user perhaps the enamel is sufficient for your needs and won't chip off. However for me I will write to KitchenAid and purchase one without the enamel.

KitchenAid Professional 600 Series 6-Quart Stand Mixers Review

KitchenAid Professional 600 Series 6-Quart Stand MixersI already own a 5 Qt mixer from the "Artisan Series" but decided to upgrade to this model so that I could make larger batches of bread dough.For my recipe, a single batch is 2 cups of bread flour.I tried making a double batch (4 cups) in my new Pro 600, but after about 15 min. of kneading, the motor just turned off.I thought I had burned it out, but after consulting the instruction manual, it seems this is normal.Normal?!Yes, that's what it said--all I needed to do was wait for the motor to cool off (it's also "normal" for it to get so hot it is uncomfortable to touch) for 30 min. and then try again.I find it hard to believe that this mixer could make bread with 14 cups of AP flour, as the box says.Having said that, here are my thoughts on this mixer vs. the "Artisan Series" mixer I already own:1.The motor consumes over 50% more electricity (and is certainly more noisy) in the pro 600, but how much of that is being converted to extra torque, I'm not really sure.What I do know is that I can only do a single batch of bread at a time in either mixer.
2.As has been mentioned in other reviews, the Artisan mixer came with a "coated" paddle and dough hook, whereas the pro 600 has "Brandished steel".This means the Artisan's implements are dishwasher safe but the pro 600's are not.I had assumed those bright, shiny implements that I saw in the store display were stainless steel, but I guess not.If it weren't for this problem and the huge price tag, I would have given this mixer 5 stars.

On the plus side...

3.I love the new spiral dough hook--it is much better than the C shaped one in my Artisan
4.The soft start feature is a nice touch.Then again, it would be even nicer if there was a speed lower than the lowest one provided.
5.The larger bowl is nice
6.There is more of a difference between speeds 7-10 than the Artisan

Things I'd like to see changed in the next iteration:
--A gear box.I have a cordless drill that has a high and low gear.As could be expected, low is for more power, high is for more speed.Why don't these mixers use a simple gear selector like that?This would be a HUGE improvement--it would not only provide more power, but the lower speed I would like, as mentioned in point 4.
--Stainless steel implements as mentioned in point #2

CONCLUSION:
A very nice mixer, but so is my "Artisan".If you are going to buy a new mixer (and don't have an unlimited supply of money to throw at it), I wouldn't recommend the Pro 600--get one from the Artisan series instead--it is much cheaper and does just about as good a job.There are small advantages to the Pro 600, but even all together, I don't think they are worth the added price.

(I actually bought this from E-Bay, (better price and freebies too) and they have reviews, but I don't know if I can count on their review system like I can Amazon's.)Anyway, I took the plung and bought this beauty, I think that the smaller size of the holes in the trays were what made the decision for me, along with the $100+ difference in the price, and the free silicone liner sheets.It is quiet, efficient, and I just love it.It came with 3 free silicone liner sheets for fruit leather that I would have had to pay extra for with the Excalibur and the Nesco, and it came with a face plate filler so that I can pull out 4 trays and make yoghurt in it if I want to.

I have dried bananas, strawberries and oranges so far with great results.I was surprised that the oranges were so good, never expected to like them, just did not want them to go bad, so I sliced them in whole circles and put them on the trays. They were crispy/chewy and sweet, and I will save the rinds and chop them in my blender to use later for recipes that call for orange zest. I made Essiene bread this last week, using sprouted wheat, raisins, and sunflower seeds.It was very fast and with the openings of the trays about 1/2 inch, I put the patties right on the trays, no liner, and it was fine, no chunks falling through.I love the separate temperature control, it is nice.So far, 2 months later, I have no complaints except my family is eating the dried fruit as fast as I have time to make it, and I was hoping to store some of it.My granddaughter has a sweet tooth, and she has her chubby little hands full of the bananas when she is here.I would have loved to put some of the dried strawberries in my Mueseli, but they disappeared before I could sneak some away.I am ready for summer to come (we are still having snow storms...) and for my garden to produce so that I can really put it to good use.I will try jerky soon, but I have no doubt that it will do the job well.I wanted to wait and write this review until I was sure it would work well for all of my needs, and I am confident to recommend this to anyone who is wanting a good dehydrator for a good price.It is bigger than the Nesco, smaller than the Excaliber, at 10 square feet of drying space, it more than meets my needs.It is just the right size for my counter, not too big, sits next to the microwave.It makes less noise by far than my dishwasher or my stove hood fan.I know it is on, but I can still think and hear what everyone is saying.The kitchen smells wonderful while it is running as well, like whatever I am drying.I expect to be able to take advantage of sales, Costco sized packages, and my garden offerings this year, without worrying about spoilage, plus save a little money, eat a little better.Not a bad life...grin...

Customer service was amazing.I received it within 3 days of ordering it, if you can believe that.I actually had a problem with the unit.It was explained to me that sometimes when the unit is drop shipped through UPS, they actually drop it, and the protective grill around the fan can get shifted.Well mine did, and it had the fan blade trapped.I turned on the unit and washed the trays off for my first use, but the fan blade was not turning and it melted.Oh man, I had the trays full of sliced bananas and no dehydrator!Bummer, plus my husband had already thrown the box away so how could I even send it back?I did not want to send it back, I just wanted it to work!I took it apart and could see where the problem was, this was a Saturday and their office was closed, so I E-mailed the company, Mercantile Station 2, asking them to send me a replacement fan blade.Within 30 minutes I had a personal phone call (again, this is Saturday and they are closed) and a promise to ship me a new fan blade the following Monday.He explained to me that about 1 in 80 customers had had this problem, (leave it to me to be the 1 in 80...) and that they were looking into their packaging to fix the problem.Meanwhile he could not have been nicer, or more accommodating, and he was very grateful that I was willing to fix the problem myself.Me too, I did not want to have to wait for an exchange, I just wanted to get it working, and it does, and I am one happy dehydrating woman!(So check that your fan blade is free of impingement before you turn your unit on, which is easy, just take out the trays and you can see all the inner workings.)FEEL CONFIDENT to purchase this unit and save a good $100+ over the other comparable units on the market.

KitchenAid KP26M1XBS Professional 600, 6-Quart Bowl Lift Stand MixersI got my kitchenaid 600 mixer from amazon. After it arrived, I prepared a sourdough recipe that called for 8 cups of flour, the mixer bogged down and quit. I have prepared the same recipe 4 more times, each time the mixer quits. I thought this behavior was abnormal, but after a bit of online snooping, it turns out that many people experience similar problems when working with thicker doughs.

Kitchenaid clains it can handle 14 cups of all purpose flour, it simply cannot, in fact, i would set the maximum at about 10 cups for a less dense dough, and at 7 or 8 for thicker breads.

Ultimately, this is the best mixer available to the home baker in this price range, as much sturdier commerial grade models in this size ( 6 quarts) begin at about $1500. However, don't expext to use it to make thick bread or pizza doughs in large quantities, it simply isn't up to the task. It will do most of the work, but some hand kneading is still required.

Despite it's all steel gears and automatic shutoff feature, it seems that the motor and drive mechanisms are underbuilt and prone to failure if overloaded. On the upside, if your mixer happens to malfunction within a year of purchase (mine did after 2 weeks), Kitchenaid has great customer support and will replace the unit.

In short, it is a great mixer, but doesn't live up to the manufacture's promises.
